Ingredients:

Scones:

  • 2 cups (250g) all-purpose flour
  • 1/3 cup (67g) granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 8 tablespoons (113g) cold unsalted butter, grated
  • 3 ounces (85g) sour cream
  • 1 large egg
  • 1 teaspoon granulated sugar (for sprinkling)

Optional Add-Ins: Cranberries, orange zest, chocolate chips, vanilla extract

Vanilla Glaze:

  • 2 1/2 cups (300g) powdered sugar
  • 3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

Preheat your oven to 400°F (200°C) or 375°F (190°C) for convection ovens.

Whisk together the flour, 1/3 cup (67g) sugar, baking powder, salt, and baking soda in a medium bowl.

Grate the cold butter into the flour mixture using a box grater. Use your fingers to work the butter into the flour until the mixture resembles coarse meal.

Stir in any desired add-ins.

In a small bowl, whisk together the sour cream and egg. Add any additional zest or flavorings.

Using a fork, stir the sour cream mixture into the flour mixture until a large dough clump forms. Use your hands to shape the dough into a ball.

Place the dough on a lightly floured surface and pat it into a 7-inch circle, about 3/4 inch thick. Sprinkle the remaining 1 teaspoon of sugar on top.

Using a sharp knife, cut the dough into 8 equal triangles. Place the scones on a baking sheet, spacing them about 1 inch apart.

Bake for 15-17 minutes, or until the scones are golden brown.

Cool baked scones on a rack and drizzle with vanilla glaze.

  • Orange Pistachio Cranberry: Add 1/2 cup of chopped pistachios, 1/2 cup of chopped cranberries, and 1 tablespoon of frozen orange zest.
  • Cinnamon Almond: Add 1 teaspoon of almond extract, 3/4 cup of sliced almonds (skin off), and 2 tablespoons of ground cinnamon. Drizzle with Vanilla Glaze* and sprinkle with more crushed almond pieces.
